Salmon Salad Recipe

Norway is known for its abundance of salmon and other seafood. North Atlantic Salmon is probably one of the most favorite fish around, not only for clean divine flavor but for the excellent nutrition it offers. Every day we are hearing about how important it is for us to eat more healthy foods.

Because fresh salmon is quite abundant the Norwegians usually make this salmon salad with poached or baked salmon, however, at times, I use canned salmon for this classic salmon salad recipe and the result is crowd-pleasing.

Here is a quick and easy method for a salmon salad recipe to treat yourself, family, and friends to not only a healthy but a tasty meal made with salmon as the most important ingredient.

Salmon Salad Recipe
Ingredients:
2 cups flaked, drained canned salmon,
or you can use poached or baked salmon
1 cup finely chopped celery
1/4 cup finely sliced green onions
2 tablespoons finely chopped green pepper
2 tablespoons finely chopped sweet red pepper
1 tablespoon chopped sweet pickles
½ cup mayonnaise
1/3 cup plain Greek yogurt
1 teaspoon lemon juice
1 teaspoon capers
2 hard-boiled eggs - sliced for garnish
Lemon wedges for garnish
finely chopped dill, chives, or
finely chopped fresh parsley for garnish
ground Sea salt and freshly ground pepper to taste.

Directions:
Mix mayonnaise, plain yogurt, capers, salt, freshly ground pepper, and chopped vegetables, and then fold in flaked salmon.

Place the salad in the refrigerator and keep chilled for a couple of hours before serving.

Serving Ideas
If you plan to serve the salad in a large serving bowl, now is the time to garnish with the sliced eggs, tomato wedges, dill, chives, or parsley.

An eye-pleasing Ladies Luncheon idea is to serve this salmon salad on individual plates topped with salad greens or Romaine lettuce leaves topped with salmon salad and garnish with sliced hard-boiled eggs, tomato wedges, lemon wedges, and finely chopped dill, chives, and/or parsley.

Also, this delicious salmon salad is ideal to bring as a dish to pass to a party or any get-together.
