Lemon Chicken Recipe

This delightful Lemon Chicken recipe is not only delicious, but is quick and easy to make. You'll have a great meal ready in 45 minutes.

Prepare the vegetables and set the table; sit down and put your feet up while the lemon chicken is baking.

The refreshing blend of lemon and seasoning gives this baked chicken dinner recipe amazing flavors.

I prefer chicken breast for this recipe because that is what my family likes, but it will turn out great using other parts of the chicken as well.

Serves 4
Preheat oven 350°F.

2-1/2 to 3 lbs chicken or as much aa is needed for your meal
Lightly dust chicken pieces with flour
2 tablespoons olive oil
2 egg
Juice of 1-1/2 lemon
1-1/2 tablespoon lemon zest
1 cup chicken broth, warm but not hot
1/2 teaspoon garlic powder, optional
1 tablespoon chopped fresh parsley
Salt and freshly ground pepper to taste

Flour and season chicken pieces lightly
Pour oil into a shallow oven to table pan, heat and saute chicken on both sides until golden
Beat eggs and add lemon juice. And 1 tablespoon lemon zest
Add chicken broth gradually while whisking
Pour mixture over chicken and
sprinkle with parsley and 1/2 tablespoon lemon zest

Bake at 350° for 35-40 minutes. Custard is best if not over baked.
