Autumn is here again, and the orchards are full of crisp and juicy apples. But, it doesn't have to be fall time to bake this tasty apple dessert event, any time is the best time to enjoy this yummy dessert with crispy almond topping. Another big benefit is, of course, that this sweet treat contains no flour - it is gluten-free.
So...what kind of apples should you use to make an apple dessert? Any common variety will work great, such as Granny Smith, Gala, Fiji, Golden Delicious, or Pink Lady.
Quite frankly, I use whatever apples I have on hand. In my book, apples are apples, and I have hardly found one that didn’t taste and bake like an apple. Haha
Honey Crisps work great, also, no matter which way you eat them. And just because an apple is not bright red or green does not mean they are not a good apple.
Norwegian Apple Dessert with Crispy Almond Topping
A flour-free and gluten-free dessert
Recipe and Directions
Serves 6
Preheat oven 400° F.
Bake time: 15-20 minutes.
Peel and slice 6-8 apples and step them by placing them into the liquid listed below.
Preparation:
As I peel the apples, I place them in a bowl with water and a few tablespoons of lemon juice to prevent them from turning brown.
2-1/2 cups (5 dl. (deciliter) water
3/4-cup (1-1/2 dl.) sugar
Place peeled, sliced apples and liquid into a pan and
bring to a boil. Turn the heat down to a slow simmer. Strain
out the liquid before the apples are soft.
Place slices in a baking pan coated with Crisco or butter.
Topping
1/2 cup (100 gr.) butter
3/4 cup sugar
3 egg yolks
1-cup (2 dl.) chopped blanched almonds. Very seldom do I blanch the almonds; I prefer unblanched. They have more texture and color, which I prefer in making most desserts.
3 egg whites
Blend sugar and butter in a mixer until a light yellow, creamy texture. Stir in egg yolks and almonds.
Whip the egg whites until stiff and fold carefully into the batter.
Spread the topping batter carefully over the slices.
Bake this dessert in the middle of the oven at 400°F. (200°C.) for 15-20 minutes until light golden in color.
Serve this flour-free and gluten-free apple dessert warm with ice cream or cold with whipped cream.
