Almond Cake (mandelkake in Norwegian) is quick and easy to make and OH so tasty.

If you enjoy almonds as much as I do, you will love this delicious cake, not only as a dessert, but a slice of this awesomeness will brighten your morning with a cup of coffee. You can even call this treat a breakfast cake.

Top a slice of cake with berries and ice cream for an after-dinner deliciousness.

For an extra touch, a large spoonful of cherry pie filling and a generous dollop of whipped cream on top would make this experience well worth it for anyone with a sweet tooth. I must confess, I am one of them.

Almond Cake (Mandelkake)
Preheat oven 350° F.
Preparation time from start to finish: 1 hour.
Baking time 40-45 minutes. Insert a wooden skewer into the cake after about 35-40 minutes, to check if it's done, as ovens don't bake the same.

Ingredients:
2 cups flour
1-1/4 cups sugar
1 stick butter (4 oz/113 gr)
2 eggs
2 tablespoons Greek yogurt/plain full-fat
1/4-cup ground almonds
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon pure almond extract
Powdered sugar to lightly sift over cooled cake.

Preparation:
Cream butter and sugar together
Add eggs
Add pure almond extract and yogurt
Mix flour, baking powder
and salt before adding to the batter
Add ground nuts and flour
intermittently
Mix well

A Bundt pan is ideal for baking this cake, but any pan will work.

Coat the pan with butter or coconut oil, then lightly dust with flour; shake off any excess. Pour batter into the pan and bake for 40-45 minutes in a preheated oven.

Cool before removing from the pan. Sift the cake with powdered sugar and serve.

This Almond Cake (Mandelkake) can be kept in the freezer and can be prepared well in advance for your event.
