Au Gratin Cod
Au Gratin Cod (Fiskegrateng in Norwegian.) Cod is lean, healthy, delicious and mild in flavor. It is also called the beef of the sea. This fish is white in color, has a firm texture and can be prepared in various ways. Here is a recipe that has been used in Norway for ages with a few variations, of course. Cod Au Gratin serves 4. Here is information to adjust this recipe: Approximately 3-4 ounces (100 gram) fish per person. approximately 1 cup sauce per person.
Ingredients: serves 4 - 5
16 ounces (Approximately 500 gram cooked cod or other fish on hand. 2 eggs 1-cup hot water to dissolve bouillon cubes* or use fish stock. 1-1/2 bouillon cubes (less if using fish stock). 3 cups milk 1 cup shredded sharp cheddar cheese (retain 2 tablespoons for garnish) 4 tablespoons butter 5 tablespoons flour 1-cup leek chopped (you can also use green or regular onions). 6 cups cooked macaroni or noodles of choice. 1 teaspoon capers 1/4 teaspoon freshly ground nutmeg. 1 tablespoon chopped chives or parsley for garnish. 2 tablespoons breadcrumbs for garnish. Salt to taste. Freshly ground white pepper to taste. Sauce: 4-tablespoons butter 5 tablespoons flour 1 cup water containing 1-1/2 fish bouillon cubes* | *For seafoods, I use fish bouillon cubes; for chicken - chicken bouillons, and so an. Vegetable bouillon cubes work well for both fish and meats. |
3 cups milk Salt Freshly ground white pepperPreparation: Melt butter. Stir in flour 1/4 teaspoon nutmeg Gradually add fish stock* and milk while stirring constantly. Fold in sharp cheddar and melt. Add salt and pepper to taste. Let sauce cool and stir in egg yolks. Whip egg whites to foam.
Combine sauce, cooked fish, cooked macaroni or noodles and capers. Gently fold in foamy egg whites. It will make the Cod Au Gratin nice and fluffy, but it will be crispy and appetizing with bubbly cheese on top - lots of nice texture. Transfer to "bake-and-serve" dish coated with oil or butter. Garnish with breadcrumbs, shredded cheddar cheese, chives or parsley. Bake at 350° F. for 30 minutes in preheated oven. This is a great "make-ahead-meal". Prepare in advance and pop it in the oven when you get home from work or shopping. Make your salad while the food is baking and have a delicious Au Gratin Cod dinner in 30 minutes.
