Norwegian Mandelkake
Almond Cake Recipe


This Almond Cake recipe (Mandelkake), is quick and easy to make. So, why not bake a tasty home made dessert for family and friends?








Mandelkake
Preheat oven 350° F.

Ingredients:
1-1/4 cups sugar
1 stick butter (4 ounces/113 gram)
2 eggs
2 tablespoons yogurt/plain
2 cups flour
1/4-cup ground almonds
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon pure almond extract
Powdered sugar to sprinkle

Preparation:
Cream butter and sugar together.
Add eggs
Add extract and yogurt
Mix flour, baking powder
and salt before adding to batter.
Add ground nuts, flour intermittently.
Mix well.

A Bundt pan is perfect for this cake, but any pan will work fine.

First coat pan with butter or Crisco and lightly dust with flour - shake off excess.

Pour batter into pan and bake in preheated oven 350° F. for 40-45 minutes.

Cool before removing from pan. Sprinkle cake with powdered sugar and serve.

This delightful home made dessert will freeze well, so you can prepare well in advance for your event.
