Norwegian Almond Cake
Almond Cake (mandelkake in Norwegian) is quick and easy to make and OH so tasty.
If you enjoy almonds as much as I do, you will love this full-flavored cake, not only as a dessert, but with a cup of coffee for breakfast.
You can top a slice with berries and ice cream for an after dinner delight. And it is is also easy to take along to friends who will be pleased when you bring it for your next get-together.

Preheat oven 350° F.
Preparation time from start to finish: 1 hour.
Baking time 40-45 minutes.
2 cups flour
1-1/4 cups sugar
1 stick butter (4 ounces/113 gram)
2 tablespoons yogurt/plain
1/4-cup ground almonds
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon pure almond extract
Powdered sugar to sprinkle.
Cream butter and sugar together.
Add pure almond extract and yogurt
Mix flour, baking powder
and salt before adding to batter.
Add ground nuts and flour
A Bunt pan is perfect for baking this cake, but any pan will work fine.
Coat the pan with butter or Crisco and lightly dust with flour - shake off excess. Pour batter into pan and bake for 40-45 minutes in preheated oven.
Cool before removing from pan. Sprinkle the cake with powdered sugar and serve.
Mandelkake will freeze well, so you can prepare well in advance for your event.
