Apple Dessert

A delicious Apple Dessert/Apple Cake with crisp Almond Topping.

Fall is here again and it is time to visit the apple orchards and get back to your kitchen and do some baking.

Cake with crisp Almond Topping
Serves 6

Mixture for steeping:
2-1/2 cups (5 deciliter) water
3/4-cup (1-1/2 deciliter) sugar

Preparation:
Peel and slice 6-8 apples. Steep in above mixture until almost soft.

After straining, place slices in a baking pan coated with Crisco or butter.

Cake batter:
4-oz./1/2 cup (100 gr.) butter
3 egg yolks
1-cup (2 dl.) chopped blanched almonds
3 egg whites

Blend sugar and butter in mixer until a light creamy texture. Stir in egg yolks and almonds.

Whip egg whites until stiff and fold carefully into cake batter. Spread this mixture carefully over the slices.

Bake in the middle of oven at 400° F. (200° C.) for 15-20 minutes until light golden brown.

Serve this apple cake warm with ice cream or cold with whipped cream.
