Lemon Chicken


This delightful Lemon Chicken recipe is not only delicious, but is quick and easy to make. You'll have a great meal ready in 45 minutes.

Prepare the vegetables and set the table; sit down and put your feet up while the lemon chicken is baking.

Once your family has tried it they will be asking for you to make this meal again and again.

The refreshing blend of lemon and seasoning gives this chicken dinner amazing flavors.

I prefer chicken breast for this recipe because that is what my family likes. But it will turn out great using whatever parts of the chicken you choose.

Serves 4

Preheat oven 350°F.

Ingredients:
2-1/2 to 3 lbs chicken
Flour to lightly dust chicken pieces
2 tablespoons olive oil
2 egg
Juice of 1-1/2 lemon
1 tablespoon lemon zest
1 cup chicken broth, warm but not hot
1 teaspoon garlic powder, optional
1 tablespoon chopped fresh parsley
Salt and freshly ground pepper to taste

Preparation:
Flour and season chicken pieces lightly
Pour oil into a shallow oven to table pan, heat and saute chicken on both sides until golden
Beat eggs and add lemon juice. And lemon zest
Add chicken broth gradually while whisking.
Pour mixture over chicken and
sprinkle with parsley.

An easy way to dust chicken with flour is to first mix the flour, salt and pepper together into a little bowl and pour it into a tea strainer

After washing the chicken well in cold water, drain and dry with paper towels. Place the pieces on a large plate.

Sift flour and seasoning from the tea strainer over chicken on one side and turn chicken over and repeat. Grind extra pepper over the chicken to taste.
Bake at 350° for 40 minutes. Custard is best if not over baked.
