Marinated Pork Loin

My friends still rave about the Marinated Pork Loin cooked in my crockpot. After simmering in tbe crockpot all day we gathered in the kitchen and had a feast.

Not only was it quick easy and easy to prepare, but the meat was super tender and delicious.

I was concerned about having guests that day because we were in the middle of a big project at our lake house. and I would be gone all day.

I needed to be at the house while a contractor would be installing a window over the kitchen sin. Believe it not, there was no window by my kitchen sink - the wall blocked the beautiful view of the lake and I desperately needed a window. There was a great need for lake view while doing dishes.

My problem was that I had already invited friends - so I needed something easy, but delicious to prepare.

I chose the recipe for marinated pork loin because I could pop it in the crock pot. While we were getting the project done away from home, the meal was happily cooking in the kitchen.

Here is how to make this tender and tasty dinner.

One large pork loin
1/2 cup ketchup
1/2 cup water
2 tablespoons brown sugar
2 tablespoons apple cider vinegar
2 tablespoons Worcestershire sauce
2 cloves garlic (minced), dried granules or powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper

Marinade Sauce:
Combine ketchup, water, brown sugar, vinegar, Worcestershire sauce, garlic, salt, pepper, and cayenne pepper.

Do not use acidic marinades in aluminum containers.

Place meat in a large plastic food storage bag, (a 2-gallon plastic bag works great)a glass bowl, and add above mixture and marinate overnight in the refrigerator. Turn bag from time to time.

Cook in a crockpot on low for 8 to 10 hours or roast in the oven at 350°F. Add some of the liquid from the marinade.

Pour the remainder into a saucepan and bring up to a boil and refrigerate. You may want to use some or all of it to add flavor to the gravy.

For a quick sauce/gravy pour the liquid from the slow cooker into a saucepan and add peach jam or orange marmalade. In case you use a roasting pan, add the drippings.

To thicken the sauce, add 1 tablespoon or more flour to cold chicken broth, stir well and add to the liquid in the saucepan while stirring. Bring the liquid to a boil while stirring. Now you have very tasty gravy for your meal.

I served Sweet Sour Red Cabbage (Rødkål) and Mom's Mashed Potatoes. along with a green vegetable.
