Salmon Salad


Salmon Salad is a delicious and refreshing way to include more healthy Omega 3 Fatty Acid in your diet.

Norway is known for its abundance of salmon and other seafood. North Atlantic Salmon is probably one of the most favorite fish around, not only for its delicious flavor but for the excellent nutrition it offers. Every day we are hearing about how important it is for us to eat more healthy foods.

In Norway, when we make a salmon salad, we would not use canned salmon, but most likely poached, baked, or smoked salmon.

Here is a quick and easy recipe for a salmon salad to treat yourself, family, or friends to not only a healthy but a tasty meal made with salmon as the most important ingredient.

Ingredients:
1 cup flaked, drained canned salmon or
use poached or baked salmon
1 cup chopped celery
1/4 cup finely sliced green onions
2 tablespoons chopped green pepper
2 tablespoons chopped red pepper
1 tablespoon chopped sweet pickles
2 hard-boiled eggs - sliced
½ cup mayonnaise 1/3 cup unflavored yogurt
1 teaspoon lemon juice
capers
Sea salt and freshly ground pepper to taste.

Directions:
Mix mayonnaise and vegetables and fold in flaked salmon. Serve this salmon salad on Romaine lettuce leaves and garnish with sliced hard-boiled eggs, tomato wedges, and capers. Enjoy!
