Salmon Salad is a delicious and refreshing way to include more healthy Omega 3 Fatty acid in your diet.
Every day we are hearing about how important it is for us to eat healthy.
Here is a quick an easy way to treat yourself to not only a healthy but a tasty salad.
1 cup flaked, drained canned salmon or
use poached or baked salmon
1 cup chopped celery
2 tablespoon chopped green pepper
2 tablespoon chopped red pepper
1 tablespoon sweet chopped pickles
2 hard boiled eggs - sliced
½ cup mayonnaise
1 teaspoon lemon juice
Sea salt and freshly ground peppers to taste.
Mix mayonnaise and vegetables. Then fold in flaked salmon. Serve on lettuce leaves and garnish with
sliced hard boiled eggs, tomato wedges and capers. Enjoy!
