Marinated Pork Roast

My friends still rave about the Marinated Pork Loin dinner I made for them. It was such a success that I am sharing the recipe for this tender, flavorful and juicy meal with you.

Ingredients:
Pork loin
1/2 cup ketchup
1/2 cup water
2 tablespoons brown sugar
2 tablespoons apple cider vinegar
2 tablespoons Worcestershire sauce
2 cloves garlic (minced), dried granules or powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper


Marinade:
Combine ketchup, water, brown sugar, vinegar, Worcestershire sauce, garlic, salt, pepper, and cayenne pepper.

Do not use acidic marinades in aluminum containers.

Place meat in large plastic food storage bag, glass bowl or stainless steel, and add above mixture and marinate overnight in refrigerator. Turn bag from time to time.

Cook in a crock pot on low for 8 to 10 hours or roast in the oven at 350°F. in some of the liquid from the marinate. Pour the remainder into a sauce pan and bring up to a boil. and refrigerate. You may want to use some or all of it to flavor the gravy.

For a quick sauce/gravy pour the liquid from the slow cooker into a saucepan and add peach jam or orange marmalade. In case you use a roasting pan, use those drippings.

To thicken the sauce, add 1 tablespoon or more flour to cold chicken broth, stir well and add to liquid in saucepan. Bring to boil while stirring and you have very tasty gravy for your meal.

I served Sweet Sour Red Cabbage (Rødkål) and Mom's Mashed Potatoes. along with a green vegetable. I can't believe this easy Marinated Pork Loin dinner would get such high ratings.
