Norwegian Butter Cookies

It's time for Holiday baking again. How about making Norwegian Butter Cookies? They are sweet, delicious and so "almond".

If you would enjoy making Tasty Christmas Gifts, you could give a box of these yummy Scandinavian cookies to friends and family near and far. Maybe they will enjoy receiving goodies for Christmas.

Ingredients:
1 lb butter
1-1/2 cups sugar
2 eggs
1 teaspoon almond extract
4 cups flour
1/3 cup ground almonds
A pinch salt (Approx.1/8 teaspoon)

Directions:
Stir butter and sugar until creamy
Add eggs gradually
Add salt and almond extract
Mix thoroughly
Add flour gradually until well blended

Form into rolls approximately 2" square on wax paper.Wrap the rolls in the paper and chill overnight. Remove paper and cut into 1/4" slices.

Make a criss cross pattern on each cookie by using a regular fork.

Save a step by rolling out the dough on the baking sheet with a rolling pin.

Use your cookie cutters for fun shapes and remove the excess dough and place baking sheet in oven.

Bake at 350°F on ungreased baking sheets for approximately 12-15 minutes or until light gold in color.

Cool thoroughly before storing in airtight container.

Place these delicious treats in a lovely tin and you have a nice Christmas gift.
