Norwegian Butter Cookies

Norwegian Butter Cookies are so yummy they will melt in your mouth. What makes them extra special is that they contain pure almond flavoring and ground almonds, as well. You could call them almond cookies, as well.

I usually make these goodies for Christmas, but my family wants me to do this "Holiday baking" all year round.

Our friends love receiving a plate loaded with these delicious Norwegian treats.

Ingredients:
1 lb butter
1-1/2 cups sugar
2 eggs
1 teaspoon pure almond extract
4 cups flour
1/3 cup ground almonds
1/8 teaspoon salt

Preparation:
Stir butter and sugar until creamy
Add eggs gradually
Add salt and almond extract
Mix thoroughly
Stir in flour gradually until well blended

Form the dough into rolls 2" square on wax paper. Wrap the rolls in the paper and chill overnight. Remove paper and cut them into 1/4" slices.

Sprinkle ground nuts on top and make a crisscross pattern on top by using a fork.

Another method:
Roll out the dough 1/4" thick on the baking sheet using a rolling pin. Make shapes with your cookie cutters - remove the excess dough and bake.

Since this is a large recipe, you can bake half now and keep the rest well-wrapped parchment paper and a plastic bag in the fridge and bake the other half later.

Bake in a preheated oven at 350°F. on dry baking sheets for 10-12 minutes or until lightly golden.

Cool thoroughly before storing the Norwegian Almond butter cookies in a lined, airtight container. Will freeze well.
